ITALIAN HOMEMADE PIZZA







My sister-inlaw recently taught me to make this pizza made with readymade pizza mixture. (I haven't learned yet how to make a pizza or pasta knead but it is definitely simple and easy), and zucchini, parmesan cheese, butter, whitecheese (mozzarella)and creme or softcheese and olive oil. And Mashed potatoes or Puree' For anyone who might be interested here are the ingredients and how to make it.
Readymade Pizza mixture
4 pcs zucchinis cut into thin round slices
30 g parmesan cheese
2 spoonful butter
2 spoonful olive oil
125 g white cheese (mozzarella cheese)
25 g creme/softcheese
1 spoonful flour
egg yolk
Puree'

1. Preheat the oven to 160 degrees.

2. Prepare the Puree', made of at least 3 or 4 normal size potatoes boiled and mashed in about 30ml (self-regulate) and 1 spoonful of butter add 2 spoonful of sugar. Set Aside.

3. Cut into thin round slices the zucchinis and saute' with olive oil on a preheated pan until golden or crunchy brown. Then set aside.

4. Cover the surface of glass tray or pan with butter and flour so that the pizza mixture will
not stick on the bottom of the tray. Spread the halfpart of the readymade pizza on the tray and put a layer of mashed potatoe and top it with the fried zucchinis. Then add on top of the zucchinis, the mozzarella or white cheese cut in pieces.

5. Sprinkle the parmesan cheese and creme cheese cut in pieces, on top. Then cover with the other half of the pizza mixture.

6. Beat the egg yolk and cover the top of the pizza knead ready for the oven.

7. Cook in the oven for 20 to thirty minutes.

Serves 3 persons. (Optional: cooked ham can also be added on top of the zucchini)
